CHOCOLATE CHUNK COOKIES

INGREDIENTS

Serves 4

3 tablespoons ground flaxseed

9 tablespoons water

1 cup softened vegan butter

3/4 cup sugar

3/4 cup brown sugar

1 teaspoon vanilla extract

2 1/2 cups flour

1 teaspoon baking soda

1 teaspoon salt

2-3 dark chocolate bars

Optional

You could add chopped nuts, dried fruit (cranberries would be great!), sprinkles for some color, or coarse sea salt if you want to be fancy

RECIPE

  1. In a small bowl, combine 3 tablespoons ground flaxseed and 9 tablespoons water and set aside (this will eventually congeal and act as our egg replacement)

  2. Preheat oven to 350 degrees Fahrenheit (or skip this step if you just want the cookie dough)

  3. Combine 2 1/2 cups flour, 1 teaspoon baking soda, 1 teaspoon salt in a large bowl and set aside

  4. In a new large mixing bowl, melt 1 cup of vegan butter and add 3/4 cup sugar, 3/4 cup brown sugar, 1 teaspoon vanilla extract, and the flaxseed mixture (that should have thickened by now). Mix thoroughly until you get a brown, buttery mixture

  5. Add the flour, baking soda, and salt mixture to the buttery, sugary mixture and stir well

  6. Roughly chop 2-3 dark chocolate bars and mix it into your cookie dough mixture. If you were just in it for the edible cookie dough, you can stop here and enjoy!

  7. Scoop cookie dough balls onto greased baking sheet and bake for 12-14 minutes until brown on bottom, let cool and enjoy

  8. Freeze or refrigerate any leftover dough :)
