TOFU FRIED RICE
INGREDIENTS
Ingredients are also listed in the recipe itself
Two tablespoons of the oil of your choosing
One bag of frozen fried rice (we highly recommend the frozen veggie fried rice from Trader Joe’s)
One half block of firm tofu
Two handfuls of spinach (or literally whatever veggies you have on hand)
Soy sauce & Sriracha
Optional
Veggies of your choice — we recommend edamame, kale, or frozen Asian stir fry veggies
Vegan mayo and Sriracha to make Sriracha aioli to top
RECIPE - SERVES 2
Heat 2 tablespoons of oil (any kind will do) in a large pan or wok over medium heat.
Add one bag of Trader Joe’s veggie fried rice (or the frozen fried rice of your choosing) and stir.
Once fried rice is about halfway thawed, using your hands, crumble 1/2 of a block of firm tofu into the pan.
Add two handfuls of pre-washed spinach (or chopped frozen spinach).
Stir, and add soy sauce and Sriracha sauce to taste.
Note: You can add more veggies to the mixture without affecting the taste very much (including frozen edamame for more protein, too). You could also top with a Sriracha mayo — one part mayo, one quarter part Sriracha.
